Baked Lima Beans

Makes 4 - 6 servings

Here's another great dish to take to a potluck -- or serve a side dish to your own family. The recipe comes from Potluck Paradise by Rae Katherine Eighmey and Debbie Miller.

  • 1 pound dried lima beans or
    2 cans (14- to 16-ounces each) lima beans or butter beans
  • 1 medium onion, diced
  • 1 teaspoon salt (optional)
  • 1 tablespoon brown sugar
  • 1 tablespoon dark brown corn syrup
  • 1 tablespoon vinegar
  • 1 cup cream

If using dried beans, soak in water to cover overnight. Drain. If starting with canned beans, drain them well, then rinse and drain again.

Preheat oven to 350 degrees.

Lightly grease a 2-quart baking dish. Pour lima beans into dish. Add onion, salt, brown sugar, corn syrup and vinegar. Stir until well mixed.

Cover dish. Bake 1 hour. Stir in cream. Cover and bake 40 minutes. Uncover and bake until beans are very tender and sauce is thickened.
